Spicy Chickpea Stew With Brown Rice

I love to use chickpeas in my meals and desserts. So I knew I had to make this chickpea stew. here it is ~

 

Ingredients : 

  • 1 tbs olive oil
  • 1 onion, chopped
  • 2 garlic cloves
  • 1cm fresh ginger
  • 1/2 green chilli
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 400g can chopped tomatoes
  • 1 can chickpeas, rinsed and drained
  • handful of spinach
  • handful of coriander leave chopped
  • brown rice or you can use couscous
  • 2 tbs greek yoghurt

heat oil in a large based saucepan. Add onion, garlic, ginger, chilli , coriander , cumin and turmeric. Cook over medium heat for 10 min or until the onions have softened.

Add the  canned tomatoes and chickpeas. bring to the boil then simmer for 10 min.

add the spinach and stir until the spinach has wilted.

season with salt and pepper and stir in coriander leaves .

serve chickpea stew with brown rice or couscous. I love the bit where I put the yogurt on top. Enjoy!

THERMOMIX VERSION 

Ingredients :

30 ml olive oil
1 onion cut in half
2 garlic cloves
1cm fresh ginger
1/2 green chilli
1/2 tsp ground coriander
1/2 tsp cumin
1/4 tsp turmeric
400g can chopped tomatoes
1 can chickpeas, rinsed and drained
handful of spinach
handful of coriander leave chopped
brown rice or you can use couscous
2 tbs greek yoghurt

Add onion to you TM bowl and mix 10 seconds/ speed 7

Add olive oil and sauté 2 min / speed 2 

Add garlic , ginger, chilli and mix 10 seconds/ speed 5 

Add rest of spices and cook for 5 min / speed 2/reverse 

Add canned tomatoes and chickpeas and cook for 10 min/ veroma/ speed 1 / reverse 

once done pour it into your serving dish and mix in spinach until wilted.

serve with rice ( refer to your everyday cookbook for rice recipe) or couscous and dollop yoghurt on top

Coping With Endometriosis

For anyone who has endometriosis knows that it is a long battle. I have had this illness for nearly 10 years. There are days I would go out with friends for coffee then suddenly I  would have these horrible pains. I would get down on my knees and rub my stomach and just hope the pain would ease.

Iv spent years going to doctors and specialists with no real solution to ever get rid of it  but the problem with endometriosis is there isn’t a permanent solution. instead it causes infertility and scaring and extreme pain.

Over the last few years I have had to look  at ways I could reduce the symptoms of endometriosis. I’m glad to say that in the last 6 months I have seen amazing results due to my change in life style, eating and drinking.

I make smoothies and juice everyday. I use ingredients like turmeric , MACA, LSA.

in the next few months I will be sharing all the recipes that help me reduce pain and bloating caused by endometriosis.

I hope others out there dealing with this can gain strength that your not alone.
