Spicy Chickpea Stew With Brown Rice



I love to use chickpeas in my meals and desserts. So I knew I had to make this chickpea stew. here it is ~


Ingredients : 

  • 1 tbs olive oil
  • 1 onion, chopped
  • 2 garlic cloves
  • 1cm fresh ginger
  • 1/2 green chilli
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 400g can chopped tomatoes
  • 1 can chickpeas, rinsed and drained
  • handful of spinach
  • handful of coriander leave chopped
  • brown rice or you can use couscous
  • 2 tbs greek yoghurt

heat oil in a large based saucepan. Add onion, garlic, ginger, chilli , coriander , cumin and turmeric. Cook over medium heat for 10 min or until the onions have softened.

Add the  canned tomatoes and chickpeas. bring to the boil then simmer for 10 min.

add the spinach and stir until the spinach has wilted.

season with salt and pepper and stir in coriander leaves .

serve chickpea stew with brown rice or couscous. I love the bit where I put the yogurt on top. Enjoy!

handful of coriander leave chopped

2 tbs greek yoghurt

Add onion to you TM bowl and mix 10 seconds/ speed 7

Add olive oil and sauté 2 min / speed 2 

Add garlic , ginger, chilli and mix 10 seconds/ speed 5 

Add rest of spices and cook for 5 min / speed 2/reverse 

Add canned tomatoes and chickpeas and cook for 10 min/ veroma/ speed 1 / reverse 

once done pour it into your serving dish and mix in spinach until wilted.

serve with rice ( refer to your everyday cookbook for rice recipe) or couscous and dollop yoghurt on top



Coping With Endometriosis

For anyone who has endometriosis knows that it is a long battle. I have had this illness for nearly 10 years. There are days I would go out with friends for coffee then suddenly I  would have these horrible pains. I would get down on my knees and rub my stomach and just hope the pain would ease.

Iv spent years going to doctors and specialists with no real solution to ever get rid of it  but the problem with endometriosis is there isn’t a permanent solution. instead it causes infertility and scaring and extreme pain.

Over the last few years I have had to look  at ways I could reduce the symptoms of endometriosis. I’m glad to say that in the last 6 months I have seen amazing results due to my change in life style, eating and drinking.

I make smoothies and juice everyday. I use ingredients like turmeric , MACA, LSA.

in the next few months I will be sharing all the recipes that help me reduce pain and bloating caused by endometriosis.

I hope others out there dealing with this can gain strength that your not alone.



Jaffa Bliss Balls

Hook into these Jaffa Bliss balls

I don’t really use Jaffa often but when I made them into these bliss balls

they became one of my favourite bliss balls to make.


10 dates

1 cup desiccated coconut

1 cup almond meal

2 Tbs cacao powder

zest of 2 oranges

2 tbs rice malt syrup

pour all ingredients into your TM Bowl and blend for 30 seconds/speed 8

shape into balls and sprinkle orange zest on top.

30g vanilla pea protein

10 dates

1/2 cup cashews

1/2 cup desiccated coconut

1/4 LSA

2 tbs coconut oil

2 tbs cacao powder

Simply add all ingredients to your TM bowl and blend for 30 seconds speed 8

Blend & Roll (i roll mine in desiccated coconut)

this recipe can double in your Thermomix




Blueberry smoothie delight


Last few years I have been trying to eat more healthier and drink things that are nutritious. Iv been trying to find ingredients that help me especially when I have down days with my pain wih endometriosis.  I really enjoy this blueberry smoothie. And it has soo many ingredients Iv learnt to love!


  • 1 cup blueberries
  • 1 cup frozen bananas
  • 2 tbs MACA
  • 1tbs LSA
  • 1tsp cinnamon
  • 1/4 avocado
  • rice milk

Simply add all Ingredients to the TM bowl & mix speed 8 for 30 seconds



Raw decadent pine coconut cheesecake


This is the perfect spring cheesecake! If you love raw deserts then you will love this dessert .  I brought this cheesecake over to a friends place and her toddler kept saying “more! more!”

I was very happy to see the delight on her face when she had her first bite of this cheesecake. I really do love seeing people’s faces when they eat what I make. Maybe that sounds weird but I love seeing people enjoy good food.


For or the base:

  • 2 cups pistachio
  • 1 cup desiccated coconut
  • 1 cup medjool dates ( seeds taken out)
  • 2tbs coconut oil

For the filling :

  • 2 cups cashews soaked for 2+ hours
  • 1 cup pineapple juice
  • 1 cup coconut cream
  • 1/2 cup organise rice malt syrup
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut oil


Place the pistachios in the TM bowl and mill on speed 4 for 25 seconds.

Add the rest of the ingredients and mix on speed 8 for 30 seconds or until a sticky texture. Place the base in a round tin with baking paper and press down and stick In the freezer.

Filling :

Place the cashews in the TM bowl speed 8 for 30 seconds or until smooth.

Place the rest of the ingredients in the TM bowl and mix speed 8 for 30 seconds or until smooth and creamy.

Place on top of the base and as an option you can garnish fresh pineapple on top then place in the freezer. This is best left overnight in the freezer so it is nice and firm.

I have fallen in love with this recipe! I make this for my husband everyday .


  • 40g coconut
  • 1 green apple
  • 40g medjool dates
  • 40g almonds

Put all ingredients into your TM bowl . turbo 3x then top with your favourite yougurt. Done!

you can vary the almond with cashews and apricots to mix it up.

This recipe is very easy & delicious!
